Hummus  (makes about 2 cups)

Hummus is a much loved dip and is a favourite component of our Tukka Boxes.  Perfect for a snack anytime!

Tukka Box

Ingredients:

1 can (400 grams) cooked chickpeas

2 small garlic cloves, peeled

1 teaspoon sea salt

2 big tablespoons tahini

1 tablespoon ground cumin

Juice from 2 lemons

1 tablespoon honey

Water to mix

Paprika and extra virgin olive oil to serve

Equipment:

food processor or blender, measuring spoons, sieve, spoon, serving bowls

Method:

Blend all the ingredients in a food processor until you get the consistency you like.  Add a little water for a smoother mix.  Make sure you taste it and add more lemon juice, salt or honey so you get the perfect sour/sweet/salty combo. Leave for a couple of hours in the fridge to let the flavours develop. 

Notes:

To get more juice out of the lemon, press and roll under the palm of your hand on a board or bench-top.
